不同成熟度对冬枣采后贮藏品质的影响Effect of different maturity on postharvest storage quality of winter jujube fruits

摘要(Abstract):
为探究不同成熟度对冬枣果实采后贮藏品质的影响,以新疆冬枣为试材,将果实分为成熟度1(全青果)、成熟度2 (白熟期果实)和成熟度3(全红果),置于(0±1)℃、90%~95%(RH)的冷库贮藏,每10 d测定相关指标的变化。试验结果表明,冬枣果实的腐烂率、失重率和细胞膜渗透率逐渐升高,可溶性固形物变化较小,呼吸速率先上升后下降,硬度呈不断下降的变化趋势。在贮藏期间,成熟度1冬枣果实虽然能够保持较高的硬度,但果实失重率较高,可溶性固形物含量最低;成熟度2冬枣果实的失重率、呼吸速率、细胞膜渗透率低于成熟度1、3果实,并且腐烂率较低,硬度和可溶性固形物含量较高;成熟度3冬枣果实可溶性固形物含量高于成熟度1、2果实,但果实硬度下降迅速,细胞膜渗透率较高,腐烂严重。说明采后贮藏冬枣果实可选择成熟度2作为适宜的采收成熟度。
